A+ Dinner


Nothing but positive reviews on tonight’s meal, my friends. The words “everything was excellent & perfectly cooked” flowed from the lips of my top critic. I planned a special dinner in honor of my parents’ anniversary that was this last weekend. And because I just like making a big deal out of dinner once in a while. Setting the table with nice dishes, lighting candles, freshly cut flowers, heck – even creating a menu card. Just because it’s fun. Food is delicious! Take the time to really experience your food & enjoy it. I know I did tonight.

Oven Roasted Herb Chicken with a Lemon-honey Glaze

Sautéed Ginger Carrot Ribbons

Garlic Smashed Potatoes

Lemon Bars with a Ginger Shortbread Crust


Day 43: Smooth as Velvet


Day 43. February 12, 2012

Part three of our anniversary weekend: decadent red velvet crêpes with homemade cream filling and Jered’s warm cinnamon chocolate sauce drizzled on top. So pretty much we had dessert for brunch. While delicious, they were so rich and creamy I could barely eat one. But they were worth every minute of preparation. And now I have a half-dozen more in the freezer for whenever the mood strikes for crêpes. That’s what we call a win-win. I would love to make these again in the summer and fill them with fresh berries rather than cream. Mm. Cannot wait for summer berries…

Anywho. All three parts – the crêpes, cream, and chocolate sauce – can be found in the link above. A wonderful recipe & worth it for special occasions when pancakes and eggs just don’t seem exciting enough.

Day 41: Kick-Off

“Technically” our anniversary isn’t until Sunday, the 12th. But why celebrate on just one day when we can make a whole weekend out of it! Actually, this all started out as a full-weekend celebration a few weeks ago when my mama called me to say that they were going out of town for the weekend and would be passing through Eugene and thought it would be nice to stop by and have a bite to eat. I wasn’t about to turn down seeing my parents and getting free food, so the boy and I talked it out and decided we would just celebrate our anniversary on Saturday. Thing is, I wanted to make him dinner. So I extended it another day longer and made tonight the kick-off of our weekend together.  Continue reading
